Air pressure is lower at higher altitudes. The higher you are from sea level, the lower the air pressure becomes. If you live more than 1,000 feet above sea level, your best bet is to follow high altitude baking recipes. Because air pressure is lower at high altitudes, any liquids will evaporate quicker. The speed of liquid evaporation makes air bubbles rise to the top and burst.
