She is a full-blown Celiac with a sprinkling of gastroparesis, osteopenia, hypermobility disorder, endometriosis, thyroid shenanigans, and a whole host of other health issues. She didn't realize that cosmetics could have wheat as the main ingredient, but when she realized that most of her cosmetics contained wheat, she threw out most of her shampoo, conditioner, body wash, and cosmetics and started with new, fresh gluten-free cosmetics. She remembers this day because it was her sister's birthday and also the first family gathering where she had to figure out what she could eat now that she was celiacs. That day marked the beginning of her journey with an auto-immune disease. She says even with a supportive family how alone Celiac makes her feel at times or just how many times I could be humiliated at a restaurant. Episode 03 The differences between certified gluten free foods and gluten free foods Have you ever seen the symbol which contains the letters "GF" in bold with a bold circle around the letters? Or the symbol with a grain of wheat with a line crossed through it? Ever wonder what these symbols stand for? These symbols stand for certified gluten free food, which contains an extremely small amount of gluten. If you're celiacs, you know it is safe to eat these foods. But what about foods that read gluten-free, but aren't certified? Are they safe to eat? Gluten Free Food: Generally gluten free food are food are free from gluten ingredients. They are named to be gluten free, but actually they are not 100% free from gluten. They are not 100% free from gluten if these foods are made in a facility which also creates producst that have gluten. For the gluten intolerant, gluten free food are relatively safe.
