I love filet mignon. Seriously! My favorite type of meat. Maybe one of the reasons I like it so much is that I don't have it very often. If filet mignon were the only option of meat for me, though, I would likely get sick of it before too long. And someone who doesn't eat meat at all would never want to eat at my house at all. An option, any option no matter how good it is, only works for part of the population and only at certain times. (I'd hate to have filet mignon for breakfast! Or dessert!) So, in the publishing industry, there are more options.
