S02 Episode #10 Interview with Kari from Minne Celiac   Our guest today has her Bachelor's degree in Food and Nutrition. She was diagnosed with Celiac Disease in 2017, at the age of 37. She is currently a stay-at-home mom to 2 young children. She decided that since she was spending her time thinking about, researching, and eating gluten-free food that she should share her knowledge with others. Her mom passed away from breast cancer in 2012 and before she died she put together a family cookbook. She wanted to go through the  book and remake all of her recipes into gluten-free versions.   In addition, she loves to travel and refuse to let this disease get in the way!   She decided to start her blog to  help people understand that it's possible to eat gluten-free and travel. Minneapolis (and Minnesota) is an amazing place to live with beautiful lakes, art museums, history, culture, incredible people and a great food scene!
