These are tough times for restaurant owners, and if you don't have what Nick Palmeri calls a "fire in your belly", well, things are going to be even more difficult.  Nick's career in the restaurant business started at age 10 (!!) and learned the ins and outs of what it takes to run a successful operation from his father, Gaeteno. His father taught him (amongst other things ), work ethic, discipline the importance of knowing your costs and how  to treat the guest with the upmost respect and provide unrelenting hospitality to everyone who walked through the door.  Like any great restaurant man, he knows his way around the kitchen and as a certified Spirts Expert, it's safe to say he knows how to handle the job "behind the stick" too.  In this episode Nick discusses how he has taken the reigns of Gaeteno's since his father's passing, and has pivoted his business to adapt to the Covid era, all the while, providing not just food and drink, but a classic restaurant experience.
