    This week on Feast Yr Ears, host Harry Rosenblum is joined in the studio by Michael Cirino of A Razor, A Shiny Knife – an internationally-acclaimed entertainment company specializing in event design, multimedia production, and cuisine. According to Cirino, it is "a culinary performance arts group that hosts social, educational, and theatrical events around the world. These events take many shapes and forms, but they are all designed to create a unique environment around the preparation, service, and enjoyment of food." A Razor, A Shiny Knife is also exploring ways to incorporate cannabis into cooking spaces. Their cannabis cooking classes are now being offered at The Brooklyn Kitchen, for which they will demonstrate the process using totally legal herbs.

    This week on Feast Yr Ears, host Harry Rosenblum is joined in the studio by Thomas McQuillan of Baldor Specialty Foods, Inc. McQuillan is spearheading Baldor’s sustainability initiatives, with the mission of eliminating 100 percent of its organic food waste — no small task for a company that processes more than a quarter million pounds of produce each week. To do so, he created SparCs ("scraps" spelled backwards), which offers tops, bottoms, and peelings to chefs and manufacturers. What was once destined for the landfill has found a place at the table, fueling a trend that has the potential to change the way the industry handles excess food.

Chefs will serve the tables themselves, telling the story of each course from the 7-course sharing tasting menu. She provides medical nutrition therapy for conditions including eating disorders, diabetes (including gestational diabetes), weight management, hypercholesterolemia, pregnancy and Parkinson’s Disease. Lori and Harry discuss the overall tendency of our society to condemn obesity, and to praise weight loss, regardless of a person's particular circumstances.

  • Episode 23: On Being a Brewery Chef

    On this week’s episode of Feast Yr Ears, Andrew Gerson joins us in the studio to talk about being the Head of Culinary Programming for the Brooklyn Brewery. Chef Andrew is a graduate of the University of Gastronomic Sciences in Pollenzo, Italy where he studied for two years after spending a year cooking in Rome. After graduation, he returned to his native Philadelphia and co-founded the Philadelphia Mobile Food Truck Association. Eventually, he moved to Brooklyn to launch Antica Pesa Williamsburg, after having worked in their flagship restaurant in Rome. He has worked at the Brooklyn Brewery since 2013. “I think mostly it’s our failures that end up teaching us the most, rather than the successes…it’s when you mess up that you really think about it, you’re troubleshooting, you’re figuring out why this happened, and how to make it better the next time.” [16:10] – Andrew Gerson
